Chef de rang: autonomous on your rang. Alone on the whole aircraft.
A chef de rang already runs a small operation inside a larger one — four to six tables, from welcome to bill, without the maître d' whispering every move. The private cabin is that instinct extended to the galley and the dishwashing station.
Recognised from day one.
- Ownership of a section end-to-end — welcome, advice, order, service, pace, close. Operators call that autonomous cabin attendant; you already do it every service, only on four to six tables at a time.
- French service and English service techniques transfer to the cabin without adjustment. The gestures are the same; the room is smaller.
- You already reformulate a bespoke request in front of the guest and translate it to the kitchen. Onboard the kitchen becomes a galley, but the front-end reflex is identical.
- The physical discipline of moving without disturbing — serving without imposing — is exactly what a UHNW principal reads first, before tasting anything.
The gap, named honestly.
- You have never been the kitchen. In a restaurant you order and someone cooks; in the cabin nobody cooks — meals arrive from a caterer and you reheat, plate, serve and clear the whole chain alone. What was not boarded does not exist.
- You have never dealt with procurement. Placing the catering order, checking the delivery against your list, counting quantities, catching what is missing on the ramp — all of that is new.
- You know the service of a restaurant; you have not run the logistics of one. A cabin service is the logistics of a service disguised as a service.
- You have never served in a moving room, with turbulence, altitude, cabin-secure procedures and a flight-deck relationship to respect.
Chef de rang profiles convert well once they accept that half the training is off-service — sourcing, packing, sequence design, ramp discipline. Realistic path: four to six months with focused CV work and one weekend a month spent practising a full solo service on friends and family before applying.
